I would like to create an page, or an article somewhere to list the pack animals in game, along with a comparison table of how much they can carry with additional info of their general melee DPS/Health/Food Consumption to try to give folks an idea of what they might want to have in a caravan, Am I free to create a new page?And if not, Should I put it in animals ?

Just FYI theres a similar table at List of animals that already has most of that info on it, adding carry weight to it would be good.

Right, I could just slap it in there for carryweight, but as my aforementioned idea of health as well as sometimes having a animal that could take a bullet or two more might be preferential

You could add health or anything else you need as well? Just need to edit Template:Animals/Row. If you're concerned about space, there are ways to streamline the rest of the table as well, such as "Trainability" replacing "Obedience Release Rescue Haul"

It's more of, How to really display the 'health' I was thinking the body's health value, or a rough "Average" across most of the main parts. E.G. Just because a thrumbo's torso has 520 health, doesn't mean it can't die in less if something like the neck (390) gets shot.

A pack animals page may be useful, I suggest you go ahead and make it. Though be careful not to put too much redundant information.
